My name is Meg and I blog over at henning love. I have had the pleasure of meeting Sarah before and she is super sweet in life. We bonded over baking and today we are recipe swapping. To check out Sarah’s delicious mini apple pies, please head over to my blog. For you today, I have a peanut butter oatmeal cookie recipe.
My husband loves the peanut butter and chocolate combination and I made these cookies with oatmeal to make them a tinsy bit healthy.
First, gather together your ingredients.
1 stick (1/2 cup) butter, room temperature, 1/2 cup creamy peanut butter, 1/2 cup granulated sugar, 1/3 cup brown sugar, 1/2 teaspoon vanilla extract, 1 egg, 1 cup all-purpose flour, 1 teaspoon baking soda, 1/2 cup rolled oats, 1 cup semisweet chocolate chips ( I did 1/2 cup peanut butter chips, and 1/2 cup chocolate chips).
Preheat your oven to 350 degrees. In your mixing bowl, cream the butter first.
Once the butter is creamed, add in the white and brown sugar.
Cream these three ingredients together until they are light and fluffy.
Add in the peanut butter, the egg and vanilla extract.
Now add in the flour and baking soda and mix the ingredients together.
Add in the oatmeal and mix the ingredients.
Finally, add in the chips, whether it is all chocolate chips, all peanut butter or a combination of the two).
In your baking sheet, scoop about 3 tablespoons of dough for each cookie, spacing them about 2 inches apart then bake the cookies for 10 minutes or until lightly golden.
Remove the cookies from the cookie sheet, let them cool then serve, eat and enjoy with a tall glass of ice cold milk or soy milk, whatever your preference
